冇牙佬食譜 - 墨西哥辣肉豆chili con carne,

早排有人要被牙醫莫左幾隻大牙, 頭幾星期只可像嬰兒般吃糊仔,

雜菜湯, 薯蓉, 爛如泥的菜蓉, 見到牛扒同豬扒,也得過睇字,

 一個月後,我由加州回來後, 也乾趣天天陪大少吃魚吃菜蓉為主,

大家一起減肥, 減吃大大舊肉, 我不停發掘不同菜蓉食譜,

今次給我發現到雪藏菜蓉, 三合一Verte Trio, 快靚正 !!



內裡混合西蘭花, 青豆, 大蒜; 平日大少不愛吃西蘭花, 只吃波菜,

好不容易他才吃數粒, +字花菜防癌, 多吃增強免疫力,

今次不費吹灰之力, 每星期吃一次, 腸胃暢通無阻 !


有人雖大大隻,不吃肉兩三星期, 當然不是大問題,

兩個月後, 大少仍未能吃中式炒牛肉, 雞胸,

試過買超薄型牛仔柳也不成, 後來見有人瘦左一圈

有人開始好掛住牛牛....

大少想吃Polenta, Spaghetti, 用Porcini 加現剩肉醬汁,

Star 的Ragi sauce質感軟;又試用新鮮免治牛仔肉做醬汁,

大少話冇問題, 想法子加點紅肉,burger meat, 餐餐吃肉醬也會厭,

於是又用免治豬肉, 中西交替,盡量變出不同菜式, 

今個夏天八月熱辣辣, 開著冷氣, 吃焗意粉, Lasagne, Cannelloni, 

想起墨西哥人大熱天時,也吃墨西哥辣豆chili con carne,

一於整....我返宜驚 Minced Beef 多細菌, 果排仲出過事,

尤其 Frozen 果d, 即買即整..

























記得上年放埋個食譜, 立刻找出來, 萬事俱備,

只欠牛油果同紅腰豆, 不過我的腸胃受不了辣,

沒有放 Chilli, 這兒也沒jalapeno chile pepper, 又走....

用紅蒜頭, 其它香料Cummin, 跟足, 再伴牛油果,

泰狄熊自己加點Cayenne Pepper,Tabasco,

意猶未盡, 用來撈飯, 吃兩大碟
  改良版墨西哥辣豆也不賴

































以前以為好複習, 原來跟意式Ragu肉醬墓本同出一拙,

大同小異,多左紅腰豆同辣椒!!

with ground beef round, tomatoes, red beans, chili powder, peppers,
and other seasonings.

Ingredients:
• 2 cans 紅腰豆 red kidney beans or small red beans, drained 
• 1 tablespoon vegetable oil or butter
• 1 large 洋蔥,紅蔥頭 onion or shallots, quartered, sliced
• 1 青燈龍椒green bell pepper, chopped
• 1 pound 免治牛仔肉 ground meat
• 1 can (14.5 ounces) 蕃茄tomatoes 
• 1 can 智利青辣椒 mild green chile peppers 
• 2 teaspoons 墨西哥辣椒  finely chopped jalapeno chile pepper, optional
• 1 can (8 ounces)蕃茄醬 tomato sauce
• 1 Avocado 牛油果

• 1 tablespoon cumin powder
• 1 1/2 teaspoons salt
• dash cayenne pepper, or to taste
• dash ground cloves
 • 1 small bay leaf

Preparation:

• Prepare beans unless using cans. Rinse dry beans, cover with cold water, and let soak overnight.
• Drain, transfer to a large saucepan, and cover with fresh water.
• Cover and simmer for about 1 hour, or until tender. Drain.
• In a large skillet, brown the onion, pepper, and ground beef in oil.
• Add the tomatoes, tomato sauce, peppers, and seasonings.
• Cover and simmer for 1 1.2 hours, adding a little water if needed to keep from sticking.
• Check and stir frequently. Add the cooked or canned beans and heat through. • Serves 6.5

  1. 嘩,加咁多材料,一定好好味了!這裡的人也愛吃這個肉醬紅豆,不過好簡單,有時只加肉碎及少少洋蔥青椒,再煲滾焗一陣就食得。標就更愛這食物用來撈飯!

    [版主回覆10/28/2011 03:17:50]我以前也唔特別食紅腰豆, testure 問題, 不過 Minced Beef + d spice 又 Ok, with Cummins, a good Fusion, Tn P 也常用 cummins吧! 我返宜驚 Minced Beef 多細菌, 果排仲出過事.. 你知我最怕 food posioning!
